What is the amount of OT owed?

If the holiday falls on Monday and employees work 50 more hours in that week, what is the amount of overtime that I pay...10 or 20 hours, based on 10 hour workdays?

What should it be if there is no company policy. We are just a small business and this is the first time I have encountered it.
