What can be causing the temperature guage in my S-10 to continualy fluctuate while driving

The temperatue guage goes between 110 and 210 degrees when ever I am driving my truck. The temperature guage for the life of my truck would always stay at about 110 to 120 degrees and hold steady at that point ,but now it keeps fluctuating, why?

Id say you have a wire loose, in the temp gauge sending unit , but maybe iam wrong also , ive had a car and a truck that would do this, and i just got used to it, but if you change the thremastat, it might be sticking,

Or a bad sending unit sensor

I thought it might be the thermostat from the start ,but the mechanic says it cant be the thermostat, because if it were sticking the truck would overheat.The truck just had the head gasket set replaced and the mechanic thought it was the fan clutch ,which I then had replaced ,but that did not change anything. I was then told not to worry about it unless it overheats.Should I just learn to live with it? He also checked the sensor wire and said it was attached.I still think it could be the thermostat since the truck is 13 years old and every thing is still original.The mechanic said he would change the thermostat if I wanted him to ,but I just don't want to spend more money chasing this.Help!

Well if its 13 years old id say the thermostat, could use a replaceing , they go bad some times in a year or 2 , and what will it hurt , could be , its trying to stick , at times and thats why its doing this , spend the money to do this , for peace of mind , then you dont have to worry
