Why is the motor speeding up and down when it is cold?

It is a chevy pick up 350 1988. At the idle the motor speeds up and down until it warms up at a quick rate. Could this be the coolent sensor?

Nope, it's just your oil. once your oil warms up she'll purr like a kitty. olso try running a thinner grade of oil.
