My name is not on my son birth certificate and his mother and i agree that she will allow me to sign his birth certificate? what is the first thing i

You can not change the data on a birth certificate unless you can prove a mistake was made at the time it was issued. So signing your name on it would just be a gesture, but it would not be legal.

The issue here isn't the birth certificate I bet. You sound like you are worried that she will take your rights to the child away. If this is the case, have paternity established and get legal visitation so she can't "change her mind".
