Wedding midnight lunch

I'm providing midnight lunch for approximately 300 people. My question is about quantities. I plan on having buns (1.5 per person), cold cuts -? , two salads - how much of each.?--one will probably be potato the other maybe coleslaw or-- hard cheese cut in slices;?, pickles and cakes for dessert.

If you could provide me with a way of calculation of quantities or the quantity of each item I need it would be greatly appreciated.

Your caterer will be well versed in what quantities of food you need for that many people. If you are providing the food yourself you local grocery store that provides sandwiches for events can help you with the numbers.

I have done quite a bit of catering, and if I were to "guesstimate" the amount of the items that you are hoping to serve, based on 300 people*, here is what I would purchase:

15 lbs. of Sliced Turkey
10 lbs. of Sliced Ham
10 lbs. of Sliced Roast Beef

15 lbs. of sliced cheeses (buy it in bricks and have the deli slice it - less expensive that way)

25 lbs. of Potato Salad
10 lbs. of Cole Slaw

Pickles would depend on whether they are whole or sliced.

Cake size is something that your baker should be able to help you with.

Don't forget condiments for the sandwiches, such as mayonnaise, mustard, tomatoes and lettuce.

* Are you inviting 300 people, or only expecting 300 people to attend? If you are inviting 300 people, you may want to only plan on 200 - 250 attending.
