Fathe taking custody?

If the father is not named on the birth certificate can the father take custody of the child

The father has the right to file for custody/visitation. The courts will order that paternity be established first. Once it has, the father, assuming he proves a strong desire to be a part of the child's life, will most likely be granted joint legal custody and visitation.
