This sounds like a lot of fun - I assume you are dealing with high-school age or college-age students, right?
Maybe to teach them some of these skills and to help out your community you can involve a volunteer aspect so they can really get passionate about what they are doing.
First, you should put them in groups and have them select an organization in the community where they can find a need they have and devise a plan to help out that organization. For this example let's use a woman's shelter (if this is high school age students, you may want to select organizations that you have pre-selected who you know will be willing to work with the students).
Then have them choose their group project manager, business development person, public relations person, etc (what ever fits in your curriculum). This will help with both communication and group dynamics. Explain what these roles do.
Have them set up a meeting or a conference call with someone at the organization to see what items, money, help they are in need of. Then they can come together as a group and decide what they should do to either raise money, collect coats, get people to help volunteer at an event.
Then, they need to write a proposal to you for their plan of action. Since you are the "CEO" you can add your feedback, etc. and have them revise it until it's a workable plan. Then send the proposal to the person they have been working with at the organization for final client approval.
Once approved, they can start acting on their proposal. You can also have the project manager give daily class reports on their progress and have the pr person send out press releases to the class when something eventful happens.
I think this would be a really fun project and since they are interacting with the community, it can provide some real life experience as well as being a fun project they have to work together to complete!
