I ahve been approache dby several people to consult on espresso cafe star ups based on my experience with Stabucks. What should I charge?

Heck. Do like Tony Soprano and make him have you as a silent partner. You provide the business model and help them implement it. Once you get a store going you may just be able to branch out(franchise)
