Approximately, how long will eggs last in the refrigerator and how do I know if they are still good?

I keep my eggs for up to a month, depending on the season (the fridge gets opened a lot in summer, so I trust eggs a little less during that season). Whenever I crack one open, I check for a healthy yellow-orange colored yolk, clear egg white, and make sure there are no discolorations or funky smells.

When in doubt, check the package for a "sell by" date before throwing it away and put a tiny sticker on your egg holder in the fridge. This way, you won't forget when to throw them out and buy new ones.

Theoretically, you can use eggs for at least a week or two after the sell-by date, but again, it depends on the season and storage conditions.

As a side note, I've noticed that old eggs seem to have a slight grayish hue to the shell. I'd describe it as an odd, nearly transparent gray that makes the eggs look dirty.

You can tell if an egg is fresh or not by putting it in cold water - if it floats it is older.... a really fresh egg will sink, most store bought eggs are a few days old by the time they get to the store so will stand up in the water a bit.

You can keep eggs in the fridge for a long time, even more than the best before date.
Personally I have my own hens for egg production (no roosters) so i know all my eggs are fresh...

By the way, you might freak out but you can even use eggs that are 3 months old.. they will have lost some taste, but are still "good"

The color of the yolk is determined by what a hen eats -this is why free range eggs have darker yellow yolks, the color of the yolk does not determine freshness...
