Cassava flour or tapioca flour is the main staple in many countries such as Africa, Asia, Latin America and the Caribbean. Cassava flour can be replaced with wheat flour. The root itself can be baked, fried, boiled, mashed and used the same way we use, potatoes, sweet potatoes and yams. Just remember to refrigerate the wheat flour.
