Are you really surprised I'm the first redneck to answer?

:-)

Crawfish taste basically like shellfish. Mostly like dungeness crab (in my opinion). If you like crableggs you'll like crawdads.
The best way to cook them is to boil or grill (ideally - if you have time) - like any shellfish. In my area (Colorado) it's called a cajun boil.
There is a great seasoning called Nantucket Offshore - I swear by it for any shellfish!

Yes the ones you get in your area should be fine to eat as long as the creek isn't contaiminated. If people are allowed to fish and trap in the creek it should be fine.

Just make sure to follow proper cooking and handling of the crawdads and you'll be fine.

They are wild here. You can catch them yourself. Kids love catching them. Easiest way is to put a paperclip on a string, put a little piece of hot dog or bologna at the end. Throw it out in the water (shallow's) and gently and slowly pull in back. The crawdads will grab on or follow the food. When you get them to the edge you put a cup over them and scoop them up.
I personally don't catch them, my son does, I also won't cook the one's out of the creek because I'm freak and they gross me out. (I also won't peel shrimp - the furry little legs freak me out)
Most grocery stores carry them. Usually with the seafood. Sometimes you have to ask for them since they don't always put them out on display.

I had them once years and years ago in school. a teach brought them back from New Orleans. We just ate em raw and sucked the brains out. yum. not.

it wasn't actually that bad though. don't remember what it tasted like. Chicken maybe?

I like the taste of them but its such a lot of work for such a little bit of meat. and I was also creeped out by the head sucking. I just ate the meat out, I didn't suck the head.
