Entertaining spring and summer spirits

Other than beer which everyone here knows is my beverage of choice (year round) - I love long beach iced teas. You make them the same as a long island iced tea, but use cranberry juice instead of cola to top drink off. It is a very strong drink so watch yourself. LOL. And you can never forget the strawberry daquari for a hot summer day!

Sangria has been huge latley - everyone has their own version. I've become a champagne cocktail girl since valentines day when my valentine made some for me, so I'll share my favorite springtime cocktail - really good for dinner parties :)

Take frozen or fresh raspberries, add a little sugar, bring to a boil in a pot then reduce for about 10 minutes. You can also do this ahead of time and keep some in the fridge which is what I do.

Put a little in the bottom of a champagne glass, then put in a splash or amaretto and top with champagne! Tart and sweet and bubbly and refreshing! I made these for my girls a week ago before they came over for dinner.

Although you can't beat a rolling rock either!
