Everyone raves about my meatloaf. I don't like dry meatloaf so mine is really juicy. I usually save the drippings and make a gravy too. Mmmm...
All measurements are aproximate - I eyeball it when I cook
1 lb ground beef
2 raw eggs
salt, pepper, thyme, cajun seasoning, ground mustard, and whatever other seasonings look good at the time. :-)
2-3 cloves chopped garlic
1/2 cup chopped onion
1/4 - 1/2 cup BBQ sauce
2 Tbsp soy sauce
2 Tbsp worshtershire sauce
1 tsp liquid smoke
4-5 slices sandwhich bread (tore into little pieces - this is what keeps the loaf juicy and not dry)
1/4 to 1/2 c dried bread crumbs
1 can green beans (drained)
1 can diced tomatoes (drained)
sometimes a can of corn (drained) - or any other veggie you want to throw in.
Mix all ingredients together - use your hands - it's the best way to get it mixed completely. Form into a loaf (or several small loaves if you plan on taking for lunch - just reduce cooking time)
Place in a meatloaf pan or a bread pan (cassarole pan works too)
Bake at 350 covered for an hour.
Safeway sells beef sensors that check the doneness of ground meat (meatloaf) and steak. They are about $3.00 for a pack that will last a long time! I swear by them to check the meatloaf just be be positive it is done. You can find them in the meat section and I think everyone should own then - that way you always know your food is done without burning it.
