A proof operator is a person that physically handles the checks that people write. Lets say you go in the bank and deposit a check.
At the end of the night, the bank takes all the checks that have been accepted from customers and they place them in bags. Then, a courier comes and he picks up the checks. He then takes them to a processing center that the bank pays for.
The processing center has "proof operators" who take the checks out and begin to key in the dollar amounts on the checks in to their computer system and then send them through a printer that prints the dollar amount of the check on the bottom right hand side of the check. This means that the check has been processed.
The proof operator is basically showing "proof" that a check was issued and after they encode the check it gets scanned so that their is an image on file forever. The checks are destroyed after this process.
So basically, a proof operator is a processor of all the checks that people write. :)
