When am I required to pay an employee overtime?

If a 20 hour a week employee works 30 hours in a week, can the employee work 10 hours the next week; during the same pay period? Or do I have to pay them overtime for that week?

If you are an hourly employee then you have to pay them per hour. If you work them over 40 hours in a week you will need to pay overtime pay which is usually time and 1/2. You do not have to pay overtime if it is less than 40 hours a week even if their schedule states they work 20 and they really work 30, that 10 hours is not overtime pay.

I forgot to mention that if they are a salary employee you do not have to pay overtime even if they work over 40 hours.
