My mom had an old family recipe for German sausage chowder that would probably be great with deer sausage. Sorry I'm not sure I know all the exact measurements:
Take about 1lb of sausage and but into about 1/2" pieces
About 2 big potatoes
1 white onion
1 small cabbage
3 cups of milk (I make it with 1% to cut down on fat, but if you use cream it's unbelievable)
3 tbsp of flour
Some shredded swiss cheese, maybe about 1 cup worth
mince some fresh parsley
Put the sausage, potatoes and onion in a pot
Add a dash of salt and pepper
stir in about 2 cups of water
bring to a boil and reduce heat - then you just cover and let it cook until the potatoes are tender
Stir in the cabbage and cook for about 10 minutes
Move mixture into a croc pot and put on medium for about 3 hours
Stir in cheese then set the croc pot to low for another hour
Garnish with parsley
Great for the holidays!
My mom always made these with Kartoffelkloesses (Ka-tough-o-glaz-es) which are pretty much mashed potatoe dumplings - good ol' german comfort food.
