Digestion of carbohydrates starts in the mouth (saliva contains amylase, an enzyme which acts of carbs) continues in the stomach, and proceed in the duodenum, and jejunum with various enzymes. Some carbohydrates are digested by bacteria in the distal small and large bowel, causing gas and diarrhea for some people, but this is not useful generally.
